Coconut Cream Eggs


You know it's Easter in central Pennsylvania when you find baskets of homemade peanut butter eggs for sale beside every cash register in every restaurant or store. Somewhere in church basements, ladies gather to make hundreds and hundreds of peanut butter and coconut eggs to sell. You'll find them wrapped in colored foil or in wax paper bags, and they're so reasonably priced you'll find yourself buying them by the dozen. And if you're like me, you'll be eating them by the dozen too.

Iced Coconut Sugar Cookies

It's Fat Tuesday and though I don't have fastnachts, I have a big fat cookie to help you get through the day. Traditionally, Fat Tuesday is the day to get the lard and fat out of the house before lent. I used all my shortening to make these, so the tradition lives on in my house (if you don't count the chocolate, girl scout cookies, ice cream and copious amounts of butter I have lying around). These big fat sugar cookies are laced with sweet shredded coconut and topped with a light fluffy frosting. Think Lofthouse sugar cookie meets coconut macaroon.

Almond Joy Brownie Sandwiches


I'm always looking for a easy way to jazz up boxed brownies. My boyfriend's love of almond joys inspired this brownie creation. I've seen almond joy brownie recipes in the past that incorporate flaked coconut and chopped almonds right into the batter, but I wanted something more closely resembling the candy. I wanted a sweet, flaky, yet creamy filling and a rich chocolate frosting. What makes this recipe so simple is that I used a brownie mix that includes a frosting packet, so there's no need to make your own frosting or ganache to top the brownies.
