Birthday Cake Chex Mix


I love chex mix. Whether it's sweet or savory, I can't keep myself from reaching for a big handful of it at a party. My favorite chex mix has always been the chocolate peanut butter muddy buddies or puppy chow as some people call it. A unique twist on muddy buddies, I found this recipe for cake batter flavored chex mix on Pinterest and decided to whip it up for a friend's birthday cookout. Being for a birthday party, I decided to dub it Birthday Cake Chex Mix to fit the occasion.

Coated in white chocolate, powdered sugar and dry funfetti cake mix, it's just like eating a slice of birthday cake with a little less guilt (and a bit more crunch). Dress it up by adding your favorite candy pieces, using colored chocolate melts or adding extra sprinkles to give it a little more pizazz! It's sure to be a hit at any birthday party.

Birthday Cake Chex Mix
from Six Sisters Stuff

5 cups chex cereal (I've used both rice and corn, it doesn't make a big difference)
10 oz. vanilla flavored almond bark or 1 bag Wilton candy melts
1 tsp. vegetable shortening
1 1/2 cups dry funfetti cake mix
1/2 cup powdered sugar

Pour the cereal into a large bowl. In another bowl, combine funfetti mix and powdered sugar. Whisk the dry ingredients to break up any clumps.

Place the chocolate pieces into a microwave safe bowl. Add the vegetable shortening. Microwave the chocolate for 30 seconds. Stir. Continue microwaving the chocolate in 10 second increments until the chocolate is smooth.

Pour the chocolate over the cereal. Using a spatula, quickly mix the chocolate into the cereal. Dump the dry mix into the cereal and gently mix until the cereal is coated with the powder. Mix in decorative sprinkles or candy and serve.
