Baked Chocolate Doughnuts with Peanut Butter Glaze


Ever since I bought my doughnut pan a few months ago, I have been toying with the idea of a chocolate doughnut with peanut butter glaze. The thing about baked doughnuts is that I desperately want them to be fried and unhealthy, but they're not. So in reality, baked doughnuts are more like muffins pretending to be doughnuts. And, in true Amber fashion, I took something that should have been healthy and made it unhealthy by adding a sugary glaze and chopped candy. So if you're looking for a low cal alternative to a doughnut - this is not it. But, the good news is, regardless of calories, it won't clog your arteries as fast as the fried version!

And seriously, if you want low cal or healthy, this probably isn't the blog for you!



Baked Chocolate Doughnuts with Peanut Butter Glaze
adapted from Fake Ginger

1 cup all purpose flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sugar
1/2 teaspoon salt
2 tablespoons unsalted butter, melted
1/2 cup buttermilk
1 teaspoon vanilla extract
1 large egg

Preheat oven to 350 degrees. Lightly spray a doughnut pan with cooking spray.

Combine the dry ingredients in a mixing bowl with a whisk. In another mixing bowl combine the buttermilk, butter, vanilla and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Mixing too much will make the doughnuts tough.

Spoon the batter into the doughnut pan and bake 6-10 minutes.

For the glaze:
1 tablespoon peanut butter
1 tablespoon milk
1/3 cup powdered sugar

Whisk the glaze ingredients together in a bowl and dip the cooled doughnuts into the glaze. Top with crushed peanut butter cups or crushed peanuts.
