Restaurant Fake-Out: Outback Steakhouse Alice Springs Chicken

If you've ever been to Outback Steakhouse, you've probably seen Alice Springs Chicken on the menu. Named for a town in Australia, it's has to be one of Outback's most popular menu items. I know I've been ordering this chicken since I was a teenager (although back then I would order it without honey mustard because I despised any and all forms of mustard). Today I'd eat a cardboard box if it was slathered in the creamy, yellow dressing.

What I'm Loving this Week: Super Bowl Edition

Word on the street is there's a big football game coming up. I think it's called the Super Bowl (though I can't agree that either of the two teams playing are "super"). Since my work football pool ended about 7 weeks ago, I've lost all interest in watching the games. I guess I'll tune in for the commercials, but I don't even have halftime entertainment to look forward to since we're flashing back to the 80's this year with Madonna. So really, all I care about this year is the food and the premiere of The Voice after the game.

And to those of you who plan to watch The Voice this season, keep an eye out for my childhood friend, Ducky Duke, who announced his audition will be airing on the premiere. He can't say whether or not he made it as a contestant, but he's got an outstanding voice and stage presence, so I'm betting that he did! Check out some of his music on his Facebook Page and give him a "like!"

Back to the food... Will and I are staying in to watch the game on Sunday night. That doesn't mean I'm going to compromise and miss out on all the yummy snacks you'd find at your typical Super Bowl Party. On our menu so far is buffalo chicken dip, pizza muffins and take-out wings.

Cheesy Chicken Enchiladas


Ok, so I know this doesn't look like much. My sad, pathetic picture of these enchiladas doesn't do them justice. But hey, are enchiladas ever really attractive? I'm convinced they wouldn't taste as good if they were visually more than just a pile of cheese, sauce and tortilla.

I was asked to make enchiladas for dinner the other night by the same guy I made the salmon for a month ago. Remember when my mom was worried I'd be single forever for making a guy salmon? Well, she was wrong. Turns out, I'm not single at all anymore and I couldn't be happier! So when he asked me to make enchiladas, I thought sure thing, enchiladas, I've got this.

Chicken Tortilla Soup


There's nothing better on a cool, damp Saturday afternoon than a big pot of boiling soup on the stove. Especially when the recipe comes from The Pioneer Woman.

I was inspired to become a food blogger by Ree Drummond, aka the Pioneer Woman. I'm sure there are a lot of bloggers out there who would cite Ree as their inspiration. I remember seeing her on an episode of the Today Show and being immediately jealous of two things, her gorgeous red hair and her incredible food. I checked out her blog out of sheer curiosity and was captivated by her talents. She's turned what started out as a humble blog about her life on her cattle ranch into a business which now includes two cookbooks, a childrens book and a TV show on Food Network.
